The City of Cambridge is starting a thorough study of its governmental system for the first time in 80 years.

According to a news release from the mayor's office, a panel of 15 Cantabrigians chosen by the city will offer recommendations to the City Government office over the course of the following year on how to "enhance and modernize" the city's charter.
 
Residents of Cambridge will vote on any recommendations made by the committee that are approved by the City Council before they are put into effect.
 
In an interview, Ellen Shachter, a Somerville municipal official and resident of Cambridge, stated her motivation for joining the group was to look at the charter "through the lens of government efficiency and democratic decision-making."

I really want to offer feedback that strikes a balance between ensuring that we have very strong grassroots democratic mechanisms in the City of Cambridge and that the administration is able to run smoothly, she said.

Acevedo urged any citizen with ideas or comments to get in touch with the committee, saying she hopes Cambridge residents would "be a part of the conversation and a part of the changes that are going to happen."

Eleven years later, she and her husband Heng Chen run five Mala Sichuan Bistros, with locations in the Chinatowns of Houston, Katy, Sugar Land, and Montrose. The latter establishment bragged of being the first real Sichuan restaurant to run inside the loop. Sichuan cuisine is notorious for being quite spicy, but when done right, the complex array of ingredients reveals a range and depth of flavors, including salty, sour, sweet, bitter, smokey, and the spices that give a dish its heat. For those who are unaware, Xiong clarifies that the word "Mala" actually refers to two distinct spice sensations.

In many of its recipes, the Sichuan Province is particularly recognized for combining two types Chinese spice, "Ma" and "La," she notes. "The 'La' flavor is something altogether distinct from the 'Ma' flavor; the 'La' flavor is the intense, tongue-searing effect of capsaicin in chili peppers that Americans recognize from a range of other cuisines.
 
In order to prepare the palate for the "La" spices, the Sichuan peppercorn, a type of dried berry, triggers the touch sense receptors in the tongue and mouth. This causes the nerve endings to feel as though they are being lightly and frequently caressed. Mala's Sichuan-style salt and pepper prawns, for instance, have the spiciness of the La. The owners of the all-day café, which Shaina alternately calls "terrible" and "HORRIBLE," in Manhattan's financial district, forbade them from removing avocado toast or breakfast sandwiches off the menu in order to make place for more creative items. Shaina briefly considered hanging up their apron and quitting kitchens because they felt so stuck in the rut of their lifeless employment at the time. The owners of the restaurant informed the surviving workers that Shaina had forfeited the chance to become a household name when they eventually left. Shaina didn't want culinary celebrity if it required merely creating Instagram-worthy meals for the affluent masses.
