The uncontrolled humidity and the temperature of ambient air within the dryer leads to a wide variation in dryer performance and product quality. For example, a dryer operating in a dry climate performs differently in a humid climate. Similarly, dryer performance varies in cold and hot climates, and from season-to-season or day to night at the same location. Evolutionary classification and performance assessment using various indicators has been carried out for solar dryers employing natural energy materials for energy storage.

Based on the research achievements, future challenges of CFD modelling and their contribution to improving the drying process in terms of high quality and low energy consumption and decarbonisation are addressed. Drying describes a complex heat and mass transfer process of removing moisture from food materials. The final product may be in the form of sheet, flakes, film, powder, or granules. An additional size reduction step may be involved based on product requirements. Drying is an energy intensive unit operation, accounting to around 12–20% of the total energy consumed in the manufacturing industry (Raghavan et al., 2005).

This technique has been widely used and represents a highly efficient method for producing nanoemulsions containing small-sized droplets (100–500 nm)8. It uses high pressure to force fluid into specially configured microchannels9. Apart from inertia regarding turbulent flow, laminar elongational flow and cavitation also contribute to droplet break-up10. Lipoxygenase activity was measured as per the protocol followed by (Fu et al. ) using linoleic acid as substrate. Two grams of ground sample was centrifuged for 2 min at RCF of 10,000 in presence of 10 mL of 0.2 M sodium phosphate buffer (pH 7.8) solution under refrigerated conditions.
One milliliters supernatant was added to a mixture containing 4.0 mL of a 10 mmol/L linoleic acid stock solution and 1.0 mL of 0.05 mol/L sodium phosphate buffer, pH 6.5, at 25 °C. The same method was used for LOX activity tests unless otherwise indicated. The absorbance was checked at a wavelength of 234 nm at 30-s intervals during a 2.5 min period in triplicates. The same thing was repeated for blank reaction mixtures where no supernatant was added.

Figure1 shows a laboratory-scale refractance window dryer that was used for this study. The main components of this refractance window dryer were a rectangular double wall water bath and a Mylar sheet 10 Mil (250 μm) thickness having properties such as high thermal resistance, water impermeability, and infrared waves permeability. Water bath temperatures were set from 50 to 90 °C and all samples were dried in triplicate at the above-mentioned temperatures. The temperature of the mylar sheet and walnut kernels was checked constantly.
In addition, the volume and weight of dry products are reduced obtaining lower storage and transportation costs. In addition, many of these technologies are only used to dry certain types of food, whether in liquid, semi-solid or solid form, or a certain texture. Here the increasing trend was observed with an increase in temperature in the RW dryer as shown in Table 1.
Novel drying techniques emerging as outcome of laboratory-based research may yet prove to have a positive impact on the food industry in terms of scalability, energy efficiency, cost and end-product quality. Refractance window drying is one such technique that gained a lot of attention in recent years, owing to the numerous benefits it claims. The technique involves drying purees and liquids placed over a thin infrared transparent film that essentially forms a ‘window’ through which drying occurs.
The above suggest that drying nanoemulsions at low temperatures could a more heterogeneous flake structure as the IDM values obtained for these temperatures decreased. Image analysis represents a particularly useful tool for characterising food morphology. The following article details a new drying process using Refractance Window technology, developed by Richard Magoon of MCD Technologies. Mylar is a polyethylene terephthalate . The amount of energy conducted and radiated from the Mylar layer change according to the temperature of the heating source, the thickness of the flim, the thickness of the product and the humidity of the product. RW™ is a powerful tool that allows for the Refractance Window Dryer dehydration of fruit using temperatures of 95 °C and provides a 50% reduction in drying time. A slurry of liquid product is evenly applied to the top surface of a continuous sheet of transparent plastic. This impervious conveyor belt floats on a surface of hot water (210° F / 99° C or less).
Other authors have focused more on the relationship of aw with moisture and storage temperature which are very important aspects when considering food conservation12,13,39. Fat content in walnuts was observed to be in the range of 54–68% making it a major component of walnuts. Walnuts mainly contain unsaturated fatty acids, i.e. linoleic, oleic, and linolenic acids which comprise more than 90% of total fatty acids . These fatty acids make it prone to oxidation, which causes rancidity and off-flavour generation. It was observed that an increase in temperature resulted in a decrease in the level of fat content which can be attributed to lipid oxidation with an increase in lipoxygenase activity in treated samples.

In case of aromatic compounds, sample analysis showed that RW-dried strawberry purees had less esters and alcohols and more heat-induced ketones and aldehydes. Total drying time was about 4 minutes . Refractance Window™ drying uses circulating water at atmospheric pressure to carry heat to the product to be dried. Moist product is applied to the upper surface of an infrared-transparent, plastic conveyer belt that floats on the surface of the heated, circulating water. This water is continuously re-circulated and re-heated, so as to maintain temperature as heat energy is transferred to the product. Three different heat transfers occur in the Refractance Window Drying system during drying as conduction, convection and radiation.
The dendrogram Fig.7 represents the compound correlation between all the treatments of refractive window drying and indicates that the sample dried at node 4 (80 °C) and node 5 (90 °C) have a similar pattern in all the studied parameters. A similar pattern can also be observed for the samples dried at 50–60 °C indicating a cluster of nodes 1 and node 2. The dendrogram distance for both clusters were about 100 with respect to 500 for all the cases. The total phenolic content was determined as per the method followed by Amin et al. with minor modifications. The sample was mixed with 5 mL of 0.25 N Folin Ciocalteu reagent. After 3 min incubation at temperature 37 °C, 4 mL of 7.5% Na2CO3 was added to the mixture and incubated for 2 h at room temperature.

The physiochemical characteristics of the dried apple slices including flavonoid content, total phenolic compounds, antioxidant activity, vitamin C content and color were measured. In addition, the energy consumption and energy efficiency of the dying methods were evaluated. Results showed that combining ultrasound and infrared with conductive hydro-drying can result in higher drying rates and lower product moisture content. Quality of UIACHD dried apple slices was close to the freeze-dried products and it was significantly better than the cabinet dried products. Moreover, the energy efficiency of UIACHD was considerably better than the cabinet dryer and the freeze-dryer. The results of this study showed that combining ultrasound and infrared with conductive hydro-drying can lead to an energy-efficient process with good quality retention ability.

The energy transfer due to conduction or radiation depends on the thermal resistance offered by the plastic film and the evaporation of moisture is by convection of air above the product. The air convection helps to lower the temperature during drying.

A Review on Quality Preservation and Energy Efficiency in Refractance Window Drying

This rapid, yet gentle process provides superior retention of a product’s beneficial properties, including its nutrition, flavour, colour and aroma. In order to successfully transfer knowledge acquired experimentally from studies on food dehydration into industrial applications, drying kinetics modeling is necessary. Figure 4A shows that the cellular network belonging to the peel was affected by the extraction of free water during the drying process, the same situation occurs in Figure 4B, increasing the trend and observing a rough surface. As to Figure 4C, it was not possible to clearly observe the surface described above. This fact may also be related to different local chemical composition (e.g., soluble solids, pH, ionic strength, specific cations) that can influence the dried Physalis purée deformation and structure. As the material travels down the conveyor, the water in the material evaporates through the “window” in the matter of few moments, with the “window” closing in proportion to the rapid dissipation of water in the material. Because the Mylar conveyor belt is a poor heat conductor, once the material dries, the “refractance window” closes, and only a minuscule amount of heat is transferred to the product as it is carried to the end of the conveyor system. In a matter of a few moments, the water in the material on the plastic membrane’s surface evaporates, and the “window” of infrared energy closes and “refracts” back into the heated water source, no longer exposing the material to heat. Because the foods are only briefly exposed to non-damaging temperatures and are never subjected to pressure or shear force, the dried food retains all the nutritional attributes of its fresh, raw-food equivalent. The mylar film temperature was observed to be approx. 10 °C less than that of the water bath and kernel surface temperature was also 10 °C less than the temperature of the film. Kernels were placed on the surface of the film. All the experiments were done in triplicates and data was reported by ANOVA using IBM SPSS statistic 26 software.
When RW drying of the sample was done at 90 °C and 50 °C, the maximum and minimum lipoxygenase activity were discovered in the sample, which is 0.098 ± 0.013 µkatal and 0.065 ± 0.015 µkatal, respectively. There was no significant difference value found among RW dried sample. However, compared to RW (50, 60 and 70 °C) sample, lipoxygenase activity was significantly higher in sun dried sample. The sun-dried samples showed maximum lipoxygenase activity of 0.134 ± 0.011 µkatal.

And I’m not sure about your life choices, but the kitchen counter is the place I’m most likely to wield sharp objects. If you like the feeling of the super bright and bluish fluorescent lighting you would find in a big office building, you may like a color temperature in the 5000K to 6000K range.
