Eating steak, on the whole, is a comparatively expensive proposition. And finicky diners are too willing to pay the high prices for many reasons. There’s just not enough supply for the demand, so the basic rule of economics come into play. The meat is tender and oh-so-delicious, and the best steaks are prepared by the most skilled chefs. But not all steaks are equal, and some are better than others. Which one is actually better may be a matter of opinion.
