This time of year, is there anything better than a home baked buttery classic apple pie? This apple pie is truly one of my best pies that my family absolutely love...(i am not the original owner of this recipe). When my family are in the mood for a good old classic pie (any pie), this is and has been our favorite choice.

Apple pie has a very special place in my heart (my first dessert in America), My then mother-in-law served a huge slice of apple pie and tea when I first met her...We had a wonderful visit even with the language barrier in between us...By chance if you are still looking for a timeless apple pie recipe, I recommend you should keep a copy as I have kept a copy for myself for years

Pie Crust:

2 1/2 cups (350 grams) all-purpose flour

1 teaspoon salt

2 tablespoon (30 grams) granulated white sugar

1 cup (226 grams) unsalted butter, chilled, and cut into 1 inch (2.5 cm) pieces

1/4 to 1/2 cup (60 - 120 ml) ice water

Apple Filling: I

2 1/2 pounds (1.1 kg) apples (about 6 large), peeled, cored, and sliced 1/4 inch thick (about 8 cups (2 L))

1/4 cup (50 grams) granulated white sugar

1/4 cup (55 grams) light brown sugar

1 tablespoon lemon juice

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg (optional)

1/4 teaspoon salt

2 tablespoons (28 grams) unsalted butter

1 1/2 tablespoons (15 grams) cornstarch (corn flour)

Garnish:

Softly whipped cream or vanilla ice cream

Apple Pie Recipe

Pie Crust: In a food processor, place the flour, salt, and sugar and process until combined. Add the butter and process until the mixture resembles coarse meal (about 15 seconds). Pour 1/4 cup (60 ml) water in a slow, steady stream, through the feed tube until the dough just holds together when pinched. If necessary, add more water. Do not process more than 30 seconds. Turn the dough onto your work surface and gather into a ball. Divide the dough in half, flattening each half into a disk, cover with plastic wrap, and refrigerate for about one hour before using.

After the dough has chilled sufficiently, remove one portion of the dough from the fridge and place it on a lightly floured surface. Roll the pastry into a 12 inch (30 cm) circle. (To prevent the pastry from sticking to the counter and to ensure uniform thickness, keep lifting up and turning the pastry as you roll (always roll from the center of the pastry outwards).) Fold the dough in half and gently transfer to a 9 inch (23 cm) pie pan. Brush off any excess flour and trim the edges of the pastry to fit the pie pan. Cover with plastic wrap and place in the refrigerator. Then remove the second round of pastry and roll it into a 12 inch (30 cm) circle. Transfer to a parchment lined baking sheet, cover with plastic wrap, and place in the refrigerator.

Make the Apple Filling: In a large bowl combine the sliced apples with the sugars, lemon juice, ground cinnamon, nutmeg, and salt. Let sit at room temperature for at least 30 minutes or up to three hours. Then, place the apples and their juices in a strainer that is placed over a large bowl (to capture the juices). Let the apples drain for about 15-30 minutes or until you have about 1/2 cup (120 ml) of juice. Spray a 4 cup (960 ml) heatproof measuring cup with a nonstick vegetable spray, and then pour in the collected juices and the 2 tablespoons (28 grams) of unsalted butter. Place in the microwave and boil the liquid, on high, about 5 to 7 minutes or until the liquid has reduced to about 1/3 cup (80 ml) and is syrupy and lightly caramelized. (Alternatively, you could place the juices and butter in a small saucepan and boil over medium high heat on the stove.)

Meanwhile, remove the top pastry crust from the refrigerator and let it sit at room temperature for about 10 minutes so it has time to soften. Transfer the drained apples slices to a large bowl and mix them with the cornstarch (corn flour). Then pour the reduced syrup over the apples and toss to combine. Pour the apples and their syrup into the chilled pie crust. Moisten the edges of the pie shell with a little water and then place the top crust over the apples. Tuck any excess pastry under the bottom crust and then crimp the edges using your fingers or a fork. Using a sharp knife, make five- 2-inch (5 cm) slits from the center of the pie out towards the edge of the pie to allow the steam to escape. Cover the pie with plastic wrap and place in the refrigerator to chill the pastry while you preheat the oven.

Preheat the oven to 425 degrees F (220 degrees C). Place the oven rack at the lowest level and place a baking stone or baking sheet on the rack before preheating the oven. Place a piece of aluminum foil on the stone (or pan) to catch any apple juices. Set the pie on the stone or pan and bake for about 45-55 minutes or until the juices start to bubble through the slits and the apples feel tender (not mushy) when a sharp knife is inserted through a slit. Make sure to cover the edges of the pie with a foil ring to prevent over browning after about 30 minutes. Remove the pie from the oven and place on a wire rack to cool for about 3-4 hours before cutting. Serve warm or at room temperature with vanilla ice cream or softly whipped cream. Store at room temperature for 2 to 3 days.

Makes 1 - 9 inch (23 cm) pie.

Okay, here's the newest WIP! I'm really sorry for the delay on this, it's been two months since I last posted about it and things have just been a little hectic. You saw all those seamstress projects I posted? Well, take those, on top of an income tax course (I passed and have a job interview next month!), on top of Fallout 4 deciding to be released riiiiiight when I needed to focus on the holidays the most. " title="rofl" /> Basically, no work has been really sincerely done for a while for pure art outside my seamstress apprenticeship.

So, again, I'm really sorry for those of you on my preorder list waiting to get these wonderful princesses. " title="Heart" /> I really super duper appreciate your patience, and I hope you like the progress!

These princesses are designed and graciously allowed to be converted by Hannah-Alexander. This is a Work In Progress and does not reflect the final product. The next stage is color refinement and pattern-readability. While these patterns are hand drawn digitally, with a mouse, line by line, X by X, they are entirely based upon Hannah's original artwork.

All are approximately 24 inches tall on 18 count.
Mulan: 63 colors, 9 hours 16 minutes
Tinkerbell: 63 colors, 13 hours 37 minutes
Esmeralda: 62 colors, 12 hours 3 minutes

They now have the most basic color-placement refinement, you can see the difference mostly between the "before" shot and the second shot (check especially around the backstitching lines). They also gained beads and other specialties. Esmeralda really needs more refinement on her skin tone... I'm still not happy with it. There's going to be a lot more blending before the patterns are done on all areas of all princesses.

Esmeralda will be using sequins on her skirt which will come in packs sold in my shop for $2.50 (USD), mailed to you in a regular mail envelope. Many of you are overseas but don't worry - unless your price is bumped by the VAT you shouldn't see any difference in that price. The sequins only come in packs of 200 and since you only need less than 25 for the whole pattern I decided this was the best way to do it. Of course, the packs are sold separately from the pattern, and a few extras will be included in case you lose one. There will be enough for 100 Esmeraldas (50 singles, 50 sets). I'm going to try and do a sample section of her skirt with sequins to make sure it'll work out the way I want, otherrrrrwise it'll just be regular metallic stitching instead (really not as fancy as I prefer).

Pattern will be Limited Edition to be consistent with the first set and future reissues of the pattern will be at Hannah's discretion.

based on a true event, the original rhyme goes:

now, to this day, we're not sure if Lizzie Borden actually DID kill her parents, but it IS true that the mother was hit nineteen times, and the father was hit eleven times. I wanted to make the rhyme more historically correct.

oh... and funny thing... mike and I are rewatching the first season of gravity falls, and in the wax statue episode, Lizzie Borden is one of them, though she's not mentioned by name. you can tell it's her by her clothes, hair, and she's holding an axe. though, I think they could've gotten away with calling her by name if they got away with that John Wilkes Booth joke, which was very dark. XD

Yayy, first snow of the year. It's all wet mush though, but at least it was still snowing when I went outside (and at least the dolls were protected by an umbrella cause I wasn't).

I've had this idea for a while but I had to wait for now. And now I have another idea that will have to wait for a colder weather and a nicer powder snowfall (like this). The scenario here ended up being that Null is going on a work trip, so that other one will be for when he gets back, and I've already planned it down to the smallest detail (in my head). I just have no idea when the weather will be right (if ever).

But I'm glad we have snow for a little while at least. Early next week we should even go below freezing during the day, woah. Really, winters in the past few years have been pathetic here.
